First of all, I have to apologize for the tardiness of this post, but I had a whirlwind of a weekend and got a bit lost in the craziness of the holiday season. More on this later–for now, the most important thing is getting this recipe up.
For The Great Food Blogger Cookie Swap, I made Dark Chocolate Mint Truffle Surprises. They are a chocolatey, floury cookie with a creamy mint inside thanks to a melted Hershey’s Mint Truffle Kiss.
This was the first time I made this recipe, but I’m going to be sure to add it to my arsenal of holiday cookie recipes.
Dark Chocolate Mint Truffle Surprises
Makes 3 dozen cookies
1 c butter
1/2 c sugar
1 t vanilla
1 c cocoa powder
1 1/3 c flour
36 Mint Truffle Hershey Kisses
1. Preheat oven to 375F.
2. Beat butter, sugar, and vanilla together until light and fluffy.
3. Mix cocoa powder and flour together in a separate bowl. Add to sugar and butter mixture in three additions.
4. Shape 1 T of dough around each Hershey Kiss and place on cookie sheet lined with parchment paper. Bake for 10 minutes.
And voila…yummy, festive holiday cookies!
