The Great Food Blogger Cookie Swap: Dark Chocolate Mint Truffle Surprises

First of all, I have to apologize for the tardiness of this post, but I had a whirlwind of a weekend and got a bit lost in the craziness of the holiday season. More on this later–for now, the most important thing is getting this recipe up.

For The Great Food Blogger Cookie Swap, I made Dark Chocolate Mint Truffle Surprises. They are a chocolatey, floury cookie with a creamy mint inside thanks to a melted Hershey’s Mint Truffle Kiss.

This was the first time I made this recipe, but I’m going to be sure to add it to my arsenal of holiday cookie recipes.

Makes 3 dozen cookies

1 c butter
1/2 c sugar
1 t vanilla
1 c cocoa powder
1 1/3 c flour
36 Mint Truffle Hershey Kisses

1. Preheat oven to 375F.

2. Beat butter, sugar, and vanilla together until light and fluffy.

3. Mix cocoa powder and flour together in a separate bowl. Add to sugar and butter mixture in three additions.

4. Shape 1 T of dough around each Hershey Kiss and place on cookie sheet lined with parchment paper. Bake for 10 minutes.

And voila…yummy, festive holiday cookies!

I’d also love to use this post as an opportunity to give a shout out to Jenny, Kody, and Jillian for sending me some seriously delicious cookies!

I received my first package from Jillian…Nutella cookies!

My second package came from Jenny….inside I found an irresistible batch of Toffee Crunch cookies.

And, finally, my last package came from Kody…she mixed things up with Peanut Butter M&M Bars–yum!
